Technical note

Compare puree texture and retained material together

A fine-looking sample does not describe the complete refining result.

The texture target should describe what the buyer will measure and where the ingredient will be used. A beverage base, a bakery ingredient and a puree intended for further blending may use different acceptance methods.

Agree the endpoint before the demonstration

Choose the particle or fibre assessment method and the sample condition. If the customer has a reference puree, label it and retain the comparison basis. Avoid relying on a verbal request for “very smooth”.

Keep the mass balance visible

Weigh the accepted pulp and material retained by the trial. Investigate what is in the reject stream before labelling it all as unavoidable loss. Repeat the measurement when screen selection or raw-material condition changes.

Protect the downstream process

Confirm the resulting texture and flow condition at the pump and the intended package interface. If further blending or homogenization is requested, document it as a distinct requirement instead of assuming every puree line includes it.
