Frozen route

Puree for freezing, with the cold chain defined.

A frozen puree line makes and fills the product; it does not automatically include the freezer or the cold store. Define that handover before the filling scope is fixed.

Frozen bulk puree is a common destination for banana processing. The line may look simple — pulp, refine, fill — but the package, fill temperature, freezing method and cold-chain responsibility determine whether the product arrives in the right condition.

The filling machine is not a freezer. A drum or bag filled with warm puree will freeze differently from a thin bag filled at a lower temperature. The freezing rate and package geometry affect the product, so they belong in the project discussion.

The line can end at a filled package ready for freezing, or include a defined freezing interface. The freezer, cold store and distribution scope must be stated separately.

Process route

Every stage has a job.

01

Prepare the fruit

Whole-fruit preparation or peeled-flesh acceptance, selected to match the supply.

Banana Peeling Machine
05

Freeze

Freeze the package using the agreed method and rate; this is a separate scope.

06

Store and distribute

Define the cold-chain responsibility and the product release conditions.

Material balance

Measure the mass at named points.

The frozen line balance adds the package and freezing loss to the puree balance. Record the filled mass and the freezing yield separately.

Calculation note

If 1,000 kg of refined puree fills 990 kg of packages, the filling loss is 1% for that run. Freezing and storage losses are measured separately. Do not combine them into an unverified “finished yield”.

Raw material

What to send with the enquiry.

  • Fresh or frozen peeled flesh condition.
  • Puree texture and viscosity at the filling temperature.
  • Package, liner and closure drawings.
  • Freezing method and target product temperature.
  • Cold-store and distribution conditions.

Quality records

What to measure.

  • Measure fill mass and package closure.
  • Record product temperature at filling and freezing.
  • Check package integrity after freezing.
  • Keep a cold-chain record from filling to release.

Configuration choices

Same product. Different scope.

Bulk bag freezing

Foodservice or industrial customers using bag-in-box or bulk bags.

Package support and freezing rate are critical.

Drum or tote freezing

Large industrial batches.

Container geometry affects freezing time and product quality.

Pre-cooled fill

A product that needs a lower fill temperature before freezing.

Adds a cooling step and a different pump/filler duty.

Frozen puree for beverage or bakery

A downstream ingredient specification.

The application page defines the texture and handover requirements.

Before you enquire

Questions buyers ask

Does the line include a freezer?

Only if it is explicitly included. A filling machine is not a freezer, and the freezing method, capacity and cold-chain responsibility need their own scope.

What package is best for frozen banana puree?

It depends on the customer, fill mass, freezing method and handling. Bag-in-box, drums and totes each have different support, closure and freezing behaviour.

Can the same line fill aseptic and frozen packages?

The filling equipment and hygiene boundary are different. A line can be designed for both only with a clear changeover and validation plan.
