Technical note

Control oxygen exposure as a process decision

Connect open handling, buffering and air removal to the required product evidence.

Banana puree can brown quickly after tissue disruption. The colour discussion therefore starts at exposed flesh handling and continues through the complete product route. There is no single colour promise for all lots and formulations.

Locate exposure and delay

Map peeling, collection, feed hoppers, open transfers and waiting vessels. Record actual hold time during a normal run and during interruptions. Oversized buffers may conceal an imbalance while keeping product exposed for longer.

Choose controls through a trial

The project may assess enclosed transfer, controlled handling, a formulation-dependent treatment or deaeration. Treat each as a proposed control with a measurement method. Do not assume that installing a vacuum vessel establishes the preservation process.

Define how colour is judged

Use an agreed reference, lighting or measurement method, sampling time and storage condition. Compare retained samples and record formulation changes. Keep sensory acceptance separate from microbiological validation and declared shelf life.
