Technical note

Plan heat transfer beyond the first clean minute

Assess pressure and performance over the intended run, including pauses.

The first sample from clean equipment cannot establish an entire production run. A viscous-product heat-treatment proposal must describe the product envelope, the run conditions and how deposit formation is assessed.

Choose the passage with evidence

Review candidate heat-exchanger principles against the sample and its formulation. Ask for the reasons behind passage geometry, surface renewal where proposed and the selected flow range. Published examples explain possible arrangements; they do not qualify the offered machine.

Measure a representative run

Record product flow, relevant temperatures, pressure and any loss of performance. Include the planned operating duration and a defined interruption. A short water test is an installation check, not a banana-product performance trial.

Join treatment to recovery and cleaning

Identify where off-specification product is diverted and how retained product is handled after a stop. Agree the cleaning endpoint and inspection approach with the responsible team. Exact safe process conditions belong to the validated product/process specification.

Source context

FAO: Fruit-specific preservation, banana puree. Historical description of pulping, air removal, heat exchange and preservation routes. Exact machine selection needs current product trials.

The equipment-check questions above are a project-preparation framework, not a validated operating procedure.
